- 4-5 lbs silver side or topside meat
- 30 ml salt (coarse)
- 100 ml brown sugar
- 4.2 oz crushed coriander seeds
- 1 tablespoon cracked black pepper
- 0.5 oz bicarbonate of soda to soften the meat
- 1 tablespoon of paprika
- 4.2 oz red wine vinegar
- Slice the meat into strips, roughly 1 inches by .5 inch strips and about 8 inches in length.
Rub it in vinegar.
- Mix sugar, salt, coriander seeds, bicarbonate of soda, paprika and black pepper together in a container into a rubbing mix.
- Place the meat into a flat container, layering the meat.
- Cover the container with a cling film and refrigerate for half a day.
- Hang up strips up to dry in a well ventilated spot. Placing a fan on the meat will help to dry it in a couple of days.
